simple recipe for roast red pepper and tomato soup (never made it)

Just that really, have always fancied the sound of it, and after making yet another chicken and sweetcorn soup today, would love to try it.

Ocado have one on their website - very easy and you can vary ingredients or throw in sweet potatoes or whatever.

That looks lovely yoni but really wanted one with tomato as well, will google, thanks though, might make that at the same time :) shame I'm the only one in the family that eats my soup!

I do the following:

Chop a red pepper, fry off with a bit of garlic and chilli (optional).
Add a can of chopped tomatoes.
Add a pint of stock (always chicken for me, I don't like veg stock).
Simmer for 20 minutes.
Blitz with stick blender.

You can chuck in extra bits, potatoes, onion, cream at the end if you like.

I put red peppers, tomatoes, onion and garlic to roast
blend with passata and veg stock until it looks about right - I may put a splash of something in such as red wine
Oh I usually sprinkle sugar over veg before roasting
then I put rice or that small oval pasta in and simmer
