Vegetarian oven meals to make ahead of time?

It's much easier for me to cook something at lunch and pop it into the oven half an hour before tea as I'm busy with the children after the school pick up. I already make up a good cheesy pasta bake and a tomato based pasta bake and steam some veg just before serving. I plan to make cauliflower cheese next week and will roast some potatoes to go with it.

Ay other ideas? It really works for me getting dinner prepared early in the day!

A lasagne is easy to put together? I used to make a red pepper and mozzarella one, but you could also make spinach and mushroom. Or similarly a cannelloni type?

A mild veg chili also improves with reheating, or a veg curry? Serve with tortillas. Or a veggie burrito.

If you don't do spice how about a butternut squash, sage and cheese risotto? Prep some Mediterranean roasted veg and let them roast while you are out.

You could make a veg style quiche at the same time you are using your oven and serve up cold the next day with salad. Then ave an even easier day?

Nut cutlets or bean burgers could be baked in the oven or warmed through in the oven after frying earlier

Stuffed squash or stuffed baked potatoes

Butternut squash and chickpea bake? Sauté some celery, roast some butternut squash, mix together with Pre-cooked chickpeas and whatever other veg and herbs you fancy. Top with cheese and/or breadcrumbs. Serve with green veg or salad.

In such situations, I'd make:

Shepardess pie made with lentils

Turnip and Chickpea Cobbler Although this is probably more autumnal so you could substitute the turnip for some different veg. Basically, veggie cobblers are great!

Lentil Lasagne You already seem to make a few pasta dishes but here is another one that is easy and very tasty.

On the weekend, I made the celery gratin in the HFW Veg book. It was lovely and something different so you could try that type of thing....
