Split them down the middle when you've gutted them, and put them on the grill pan skin side down) then put some garlic and parsley on the top (and a bit of paprika's nice if you've got some) then a drizzle of olive oil. Then grill them hot for 5-6 min.

Just poached with salt and pepper is noce too. Brown bread and butter and salad...yum.
