Cooked abcess - yuk, yuk, yuk

We had marinaded lamb shanks last night from our wonderful butcher. However, half way through his dh cut into some funny white stuff. Having dissected it thoroughly with a pair of kitchen scissors he pronounced it to be a cyst or abcess which was beneath the muscle and probably on the bone. You could see the whole casing and it was white and cooked on the inside. Never seen anything more revolting.

Yuk hannahsaunt ... that would put me off lamb for life and I love lamb ...
Could you take it back to the shop and tell them? Although I doubt they could do anything as there would be no way they could tell themselves ....

you are doing the Australian Livestock Industry no good with this kind of tale telling, not to mention putting me off my lunch

Exactly - just one of those very weird, very random things. No offence though to Australian livestock - the quality of the meat here is absolutely superb. My butcher is one of the things I'll really miss when we go Sad.

Threebob - v true. We have adored not paying through the nose for wonderful meat that has been properly reared and allowed to develop naturally. Actually, still staggered at how reasonable our butcher is. It wasn't a comment on the quality of the meat - just an oh my goodness what a bizarre, yuk thing to happen. It has only put me off biting into meat on a bone without first checking what's underneath!
