Making soup with my still-on-the-hob stock?

Just cleared out the 3 carcasses lingering in my freezer and made stock. It tastes nice. I normally sieve it then freeze the stock in batches for making soup later. However there was quite a bit of meat on the carcasses, so can I eat some of it as a chicken soup now? I am wondering if the meat is ok given it's been in the freezer for a number of months?

Or what else should I do with it before I freeze it as I'm hungry now [bugrin]

Hmm might make a sort of chicken noodle soup with it, now that I've googled some more.
