so if my scone recipe calls for 3Oz butter, and 6 Fl Oz buttermilk...

Yuck, no. Use milk instead or add some lemon juice to the milk.

No- that won't work but you could do 6 fl oz of the cream with some lemon juice (not much) added, plus the 3oz butter.

Only I was thinking if I got the whipping cream I'd make butter out of it and have buttermilk left over - which surely means I could cut out the shaking with a marble bit and just use the cream?
