I have more time for cooking today so what shall I cook tonight?

I work full-time and DH usually does the cooking when he gets home there isn't usually the time so do much. But I'm working from home today so I said I'd cook. I want to do something that we don't normally have time for or is too phaffy for DH to cope with. Wink

Or maybe you could just say what you're cooking for dinner tonight. Thanks.

We're having homemade pesto breaded chicken nugget things with big roasted garlic mushrooms (and peas/sweetcorn for the children like every night Wink).

Reading that back, it's not a great description but it's tasty!

Why not do something like make one, freeze one lasagne?

We're having the rest of some slow cooked beef ribs in red wine that I made on the weeekend - brown ribs in hot oil, put into roasting tin, make a sauce with onion, lots of garlic, whole shallots, tinned tomatoes and red wine, tip over the ribs, slow cook for 4-5hours at 100C. Serving it with mash, carrots and cabbage - minimum prep, great cold night food!
