These are amazing and really simple: www.guardian.co.uk/lifeandstyle/2008/apr/26/recipe.foodanddrink1. Sorry - can't make link work on the tablet. Google Dan Lepard chocolate custard muffins.

120g plain flour
140g caster sugar
120ml whole milk
40g soft butter
1 egg
1.5 tsp baking powder
Dash of vanilla extract
Pinch of salt

For chocolate, take away 20g of flour and replace with 20g decent cocoa powder.

Easiest recipe - and tastiest - by far!:

6oz s/r flour, caster sugar & stork (trust me - already soft and doesn't have strong taste like butter. Once you try it for both cakes and buttercream you'll never go back. Even people who "don't like buttercream" love it)
3 eggs
1 tsp vanilla essence

cream stork & sugar, add eggs, then fold in flour.
Bake for 15-20 mins at gas 4

For buttercream, do it by eye/by taste but rule of thumb is double amount of icing sugar to stork, then tsp or 2 of vanilla.

Hab, those dan leopard muffins look amazing!

They are. Incredible texture, and so easy. Can't agree re stork above - unsalted butter all the way. But then I faff about with Swiss meringue buttercream so clearly have too much time on my hands.
