Has anyone got an amazing chilli recipe that they'd share?

Just that really! DH has always been the chilli chef in our house but as he always just makes it up and never writes anything down he can't tell me how to do it. He's been really busy at work for months and I do all the cooking and I want chilli - I really want chilli but the onions, mince, chilli powder, tomatoes and kidney beans that I used to cook as a student just isn't going to cut the mustard.

Does anyone have a recipe for an amazing chilli?

I'm sure I made one a few years ago that had a wee bit of chocolate in it but can't remember the recipe. Sounds horrid but gave the sauce a lovely richness and you couldn't actually taste the chocolate. I might go and google.....

I agree with a tiny bit of dark chocolate melted into it, plus a cinnamon stick and some cumin as well as the chilli (I use chilli powder and fresh chillies in mine).
Also cook it for as long as you can, good chilli cannot be rushed Smile

and I use kidney beans in chilli sauce. But then we like it hot enough to make your eyeballs sweat.

Def put cumin in, and blitz sun dried tomatoes and add them too, it makes all the difference. Jamie Oliver's recipe is a good one, as is the Hairy Dieters one.

I prefer to make it with stewing steak rather than mince, and I cook it on a low heat for hours. I also sometimes put the spices straight in the chilli rather than make the butter.

Another vote for Jamie's recipe but instead of chickpeas alone i use a couple of cans of mixed beans in chilli sauce.I am also very heavy handed with cumin and use a chilli mix with built in grinder which is just a supermarket brand but uses dried chillies,etc.
Also, if you have the means either slow cooker it or at least leave it on a low heat for as long as possible.
