Opened green pesto jar needs to be used up.Any ideas?

The only thing I can make with it is either pasta or grilled toast.DH not a big fan of it so usually have half a jar that goes mouldy everytime.Any other things I could do with it?Smuggle it into some meaty dish so fussy bugger DH would eat it?Thanks :)

Dollop it in to a big tomatoey risotto?

Freeze it in ice cube trays to add to pasta sauces?

Why don't you freeze it in an ice cube tray? Then you have it all portioned out for when you need it

Oooh, our favourite!
Try salmon with cous cous, broccoli or peas and a massive dollop ofpesto
Fry onion or leek with some chunks of chicken and your favourite veg and a dollop of pesto, serve with rice/pasta/cous cous
Tuna, mozzarella, tomato and spinach salad with a dollop of pesto
Fillet of fish with a smear of pesto, grill and serve with potatoes etc.
Yum!

Mixed into a fish pie, pasta with cream cheese and pesto is nice, stuffed inside a chicken breast,

Brown chicken breasts in a frying pan, add 1 packet of cherry toms cut in half when they have gone soft stir in 3 tbsp of creme Fraiche and 3 tbsp of pesto. Stir together cook for another 5 mins and serve with rice.

It's yummy and disguises the pesto taste!

Spread it on puff pastry then put whatever else you want (ham, mushrooms, tomatoes, courgettes?) and top with cheese, bake in oven until done

Fantastic with salmon. With cream cheese on a jacket potato. Blobbed onto plain pasta. On grilled chicken.

Add it to a tub of creme fraiche, a dollop of Boursin and tin of butter beans.

Heat through and add cooked pasta.

Spread over ready to roll puff pastry with sundries tomato purée. Roll into a fat sausage and cut into slices. Place each slice on side so that they look like circles and cook in medium oven. Tasty Mediterranean pinwheels!

I put a layer on top of the lasagne sheets.

Or on top of muffins/pizza bases then add the usual tomato puree and cheese etc.

Or on top of cod fillets with breadcrumbs on top.

Or just mix with pasta and peas and sweetcorn with cheese for a quick supper.

I wonder if you could freeze it in ice cuse trays?

Picked up a recipe card in waitrose the other day, chicken minestrone soup with pesto, lovely recipe, super easy, will see if I can find it online. But basically, chicken stock, diced chicken breast, noodles, peas and runner beans (or whatever veg, we added sliced carrots and broccoli) and stir in pesto. It was delicious and really healthy, highly recommend! Even my pesto hating DH liked it!

Mash potato mix with pesto and parmesan. Make into a ball and put a chunk of mozzarella in it and mould into fat sausages about length of your thumb. Flour/ egg and the coat in breadcrumbs and fry lightly.

Spread on top of chicken breasts, wrap them in tinfoil and oven bake.

You can also serve with pasta and make a nice sauce by mixing cream and pesto and heating gently.

Spread on top of salmon fillets, cover the tops in breadcrumbs (I usually make them by grating the crust from a loaf of bread, no need for it to be stale). Oven bake for 20 min on 180 (fan) or 200 (non-fan). Serve with steamed veg and new pots. Yum.

Oh pesto is your friend.

Cut open a ciabatta, slather on passata, slice on mozzarella, dribble on pesto, whack in the oven.

Mix in mash and fish for lovely fish cakes.

Stir a good dollop in minestrone.

Pizza: put a layer of pesto over cheese and cherry tomatos.

Crostini : add a layer of pesto then a good spread of goats cheese.

Tbsp in top of salmon with Parmesan on top, wrapped in Parma. Baked

Chicken with pesto top, generous mozzarella, baked

Crusty roll with bacon and avocado using basil to butter one side of roll and mayo the other side. Heavenly sarnie!

Quesadillas - dry fried tortilla spread with pesto and filled with grated cheddar (nice with few spinach leaved in too)

Chicken pesto nuggets - cut up chicken breasts, toss in bag with breadcrumbs, Parmesan and pesto. Bake 15min.

Chicken pesto crumble (chicken all in one with new pots, mozzarella, tinned toms and pesto topped with breadcrumbs and Parmesan.

Raw Chicken coated in garlic butter, topped with breadcrumbs, fried off pancetta cubes and parsley, baked. Pesto sauce to go with made from just single cream and pesto heated through

DS will get finger bread with mozarella and pesto tomorrow,chicken breasts on Saturday
