So come tell me, what can I do with this chicken that I've never done with a chicken before

There is a chicken in the fridge. It needs to be consumed tomorrow. I keep opening the fridge and looking at it. It looks eyelessly back at me. I go "meh" and reject it.

I'm not feeling the chicken love. I don't mind jointing the fucker, or boning it. I just want the bastard to stop underwhelming me with its chickeness.

Come inspire with stuff you do with dull chickens. Googles not helping.

Freeze it?

HotPinkWeaselWearingLederhosen · 12/03/2013 21:00

That's defeatist.

It will just be dull but slightly harder.

Joint it and make Greek chicken? Dead easy...

Skin and joint, chuck in a roasting tin.

Mix juice of one or two lemons, some olive oil and finely chopped garlic, throw over and marinade along with some quartered tomatoes and a handful of olives.

Cook in the oven.

Sprinkle feta cheese on top and serve with cous cous.

I usually do it with chicken breasts but it's very tasty and very easy.

Chicken with saffron, hazelnuts and honey? Joint it, Mix the other ingredients, paste it on with oil and bake it up. Very yummy.

A bit difficult if we don't know what you have already done Smile

Proper southern fried chicken? Jamaican curry? fajitas? Spanish style stew with chorizo, tomato, butter beans and baby potatoes? Or go Pakistani with a jalfrezi?

Any takers? Grin

HotPinkWeaselWearingLederhosen · 12/03/2013 21:06

GrumpyKat

You are certainly better at keeping the chicken love alive than I am Grin

Chicken chorizo and chickpea stew?

GrumpyKat · 12/03/2013 21:08

Cheesy chicken? Mix white cheese, lime juice , ginger and coriander in to a mush. Seperate the skin from the body and stuff the cheese in. Cover with bacon and roast as usual. Add chilli to the cheesy mix if you like spice. A fave in our house.

HotPinkWeaselWearingLederhosen · 12/03/2013 21:09

Normally do Roast, stewed, pie, fajitas, enchilads, white wine and mushroom, barbecue, fried and with cheese like hunters chicken.

Masala roast chicken recipe here. I use a slightly different recipe from the Cooking Like Mummyji book.

Delicious served with saffron roast potatoes and spicy red cabbage.

HeadFairy · 12/03/2013 21:11

Jointed and roasted with chunks of red onions, red peppers, whole bulbs of garlic and chunks of chorizo. Serve with couscous.

HotPinkWeaselWearingLederhosen · 12/03/2013 21:13

Shove a beer can up it's bottom? For food purposes, not general entertainment ....

Can of your choice of beer, or lemonade if you prefer. Tip around half out and drink it then drop a clove of garlic, a few sprigs of rosemary, a couple of cloves (leave them out if you don't like them), and some thyme into the can.

Make up rub for the chicken itself. There are loads of recipes online so it's just a case of finding one that suits your tastes. DH does one with brown sugar, fennel seeds, cumin, and paprika. Just mix together and rub all over the chicken.

Next you sort of sit the chicken on the can and push it down a bit so it won't fall off. Stand it in a baking tray and roast in the oven (take the shelves out).

It looks funny, sitting upright while it cooks (DS finds it hilarious that it's 'looking' at him) but it tastes great. Just remove the can once it's cooked and carve as normal - the liquid steams and flavours it from the inside out.

HotPinkWeaselWearingLederhosen · 12/03/2013 21:42

So those can up bum recipes do really work?
