Your best chicken and rice and veg soup recipe please?

Made from a carcass and so thick that your spoon stands up, yum!

i just boil carcass for an hour then strain, add 1 cup rice, 2 chopped carrots, 2 sliced leeks, 1/2 diced swede and sometimes a grated potato. Simmer for 45mins - 1hour then toss in some cooked chicken and blend if desired.
