What can I have for dinner tomorrow? Something I can throw in the slow cooker in the morning, preferably served with rice. I can do green veg on the side.

Lemon garlic chicken? Slice chicken breasts into strips, sprinkle over some salt, pepper and oregano (or whatever herbs you have ) and brown in a pan. When browned, add juice of a lemon, 3 cloves of garlic finely chopped and 500ml chicken stock.

Whack in slow cooker (I do mine for an hour on high then turn down to low for about 6hrs).

Serve with rice and veg yum :)

I think I can manage that Grin

I never know what to do with chicken breast. Nasty dry stuff yet chickens go and have 2 of them .

chicken dhansak - chicken/onions/lentils/curry powder/stock. Serve with rice.

Oh yes, curry. How much curry powder for wusses? Last time (the only time) I made a slow cooker curry it tasted lush but was waaaaaaaay too spicy and I've been too scared to do it again since as I couldn't feed it to the children so had to magic up food out of thin air.

What veg and tins do you have in?

We don't have breast that often. I'd probably do garlic, onions, tinned tomatoes. Add things like carrots, mushrooms. This would go ok with rice, but pasta would probably be better.

Do you have any hot salsa/chilli peppers, bell peppers and cannellini beans?

Sticklebug · 06/03/2013 18:50

Chicken tagine.

Fry onions, garlic and some veg (I would use squash, mushrooms, carrots, courgettes etc). Add tsp of cumin, coriander, ginger and paprika

Add cut up chicken breasts, a tin of chickpeas, tin of toms.

Add half a lemon and stick in slow cooker

Mediterranean chicken - onion, peppers, sweetcorn, tin of tomatoes - got any chick peas/lentils or herbs? Chuck them in - plus how about left over salsa dip or pesto?

Chicken and sweet potato soup. (I appreciate not everyone will have sweet potatoes in the store cupboard but it can also be made with butternut squash or carrots although sweet potato is nicest I think.

You need onions, tinned tomatoes, the chicken breasts, a pinch of mild chili or paprika, some stock/ stock cube and water + tin of coconut milk if you have it.

Chop onions, fry gently till see through. Sling in diced chicken, cook gently till white on the outside. Liquidise tinned tomatoes and sling in, along with stock and pinch of spice. Chuck in the cubed veg. Leave to simmer for 30-40 minutes. Check veg is tender, then stir in coconut milk and serve. Yum.

Either that or my staple "golden stew". Lots of golden veg, the chicken diced, some red lentils and some passata or liquidised tomatoes. Serve with whole rice- perfectly healthy and delicious to boot.

duchesse · 06/03/2013 19:36

Aargh forgot to mention the dried apricots in the golden stew!

Thank you, lots of ideas.

We have some butter beans and haricot beans I think, all out of cannelini. Lots of lentils though, we love lentils.

Think probably curry or tagine and couscous. Had spag bol tonight and stew the night before so I'm feeling a little stewed out.

Chicken and haricot bean chili con carne, add in any veg you have like mushrooms, pepper, onion, maybe sweetcorn, spices, garlic and tinned tomatoes or passata - yum

chicken haleem, is curry, you would just need to miss out the blending stage for chicken breast in slow cooker
