Have you made your own sausages? Were they any good?

And are they worth the bother?!

Next week I'm getting a pig carcass and I'm thinking of asking the butcher to leave some bits for me to make sausages from. I'm not really sure what I'll need but I do have a heavy duty meat grinder and sausage attachment for it.

I don't make sausages but regularly make very successful meatballs and meatloaf from minced pork & beef with various fillers and herbs.... Have often fancied having a bash at sausage-making.

I make pork, onion, breadcrumb and sage burgers that taste just like sausages. Not sure if its worth the hassle of cramming the mixture into skins.
