Puy lentils are fab with feta. Haven't got a recipe, I tend to just chuck things in with salads.

Lentil Salad

Like all beans and legumes, lentils are an excellent source of protein. Unlike the others, lentils do not need to be soaked before cooking. For an easy, healthy, quick meal, try this lentil salad recipe with onions and rosemary.

1/2 pound lentils, washed
several cups water
1 Tbsp salt
1 clove garlic, peeled
1/2 cup green or sweet red onions, chopped
1/4 cup fresh rosemary, chopped
black pepper
2 Tbsp olive oil
1 Tbsp wine vinegar

Combine water, salt, lentils, and whole garlic clove in sauce pan, using enough water to cover by several inches.

Bring to a boil, lower heat, and simmer, stirring occasionally, until tender, 30-40 minutes. Drain and discard garlic. Let cool for a few minutes.

Stir in onions, rosemary, and pepper, then toss with oil and vinegar. Taste, adjust seasonings, and serve.

Notes: This lentil salad is lovely served in a shallow glass bowl and decorated with a few branches of fresh rosemary.

Yield 4-6 servings

BAKED LENTILS WITH CHEESE

Yield: 6 servings

1 package (12 ounces) lentils, rinsed
2 cups water
1 bay leaf
2 tsps salt
1/4 tsp each pepper, marjoram, sage, and thyme leaves
2 large onions, chopped
3 cloves garlic minced
1 16 oz can tomatoes
2 large carrots, cut in 1/8 inch slices
1 stalk celery, thinly sliced
1 green pepper, seeded and chopped
2 tablespoons chopped fresh parsley
1 1/2 cups (6 oz.) sharp cheddar cheese, shredded

Rinse and pick over lentils, discarding any that float to the top or are discolored.

Place lentils in a shallow 3 quart casserole or 9 by 13 inch baking dish along with the water, bay leaf, salt, pepper, marjoram, sage, thyme, onions, garlic, and tomatoes with liquid from can.

Bake, covered, in a 375 degree oven for 30 minutes.

Remove from oven and stir in carrots and celery.

Cover and bake for about 40 minutes more, or until vegetables are tender.

Remove from oven and stir in green pepper and parsley. Sprinkle cheese on top.

Return to oven and bake, uncovered, for 5 more minutes or until cheese is melted.

Cod, I use 1 x tinned lentils from Waitrose, 1 x tinned mixed bean salad ditto, chopped baby toms, little green beans or anything else I fancy, lots of spring onions and crumble feta cheese into that, dress with a little balsamic vinager if dieting, or any other oil dressing you like. Yum!

BEET & LENTIL SALAD

10 oz. dried French lentils
4 c. chicken broth
2 bay leaves
2 lbs. beets, washed with 2 inches of stem attached
1 lb. onions, thickly sliced
10 to 20 lg. fresh basil leaves
5 cloves garlic, peeled & smashed
3 tbsp. olive oil
1 tsp. salt

VINAIGRETTE:

1/2 c. beet liquid
3/4 c. olive oil
1/4 c. balsamic vinegar
1 bunch scallions, minced
1 sm. bunch basil, shredded

Heat oven to 400 degrees. Combine lentils, broth and bay leaves in covered pan. Place beets in shallow roaster. Strew onion slices, basil leaves and garlic over beets. Sprinkle with oil and salt and cover tightly with foil. Place both pans in oven and roast for 1/2 hour. Remove and cool. Drain lentils and beets, reserving 1/2 cup beet liquid. Peel and cut beets in 1/4 inch cubes. Mix vinaigrette, combine all ingredients. Chill 1 hour.

Oh good! Glad we found you one! I like the sound of the beets one--I have fresh beets in my fridge right now, just might have to do that one.

I made lentil chilli the other day and ds loved it.

1 onion
1 clove garlic
tsp olive oil
handful of lentils
handful of mushrooms
1 pepper
tin of tomato
tin of kidney beans
tin of sweetcorn
half can of water
half tsp of mild chilli powder

Gently fry onion and garlic in olive oil, add mushroom, lentils, pepper, the can of toms, beans and sweetcorn.
Add about half a can of water to mixture. Bring to boil, add chilli powder and leave to simmer for about 40-45 minutes.

This makes enough for 2 adults and a few portions to freeze for ds, OR makes enough for 6 ice cube trays.

I know this isn't lentils!! but there is asparagus in the veg box so having these for dinner tonight. They are delicious!! Can almost believe it's spring.
