Favourite Veggie Lasagnes?

Just that really. I'm after some inspiration for vegetarian lasagnes. Not based around pepper or courgette as they are DD1's two hated vegetables and I try and be nice on those. I do one with spinach and ricotta. And another sort of mixed vegetable. Any other ideas?

Jamie Oliver has a recipe for cannelloni where you cook broccoli and cauliflower and mash it into fried chilli and garlic (leave out / substitute the anchovies) which is fab. Layered with another tomatoey layer would work really well.

I used to make bake bean lasagne! Fry onions, chopped mushrooms, re pepper, add baked beans and other beans if you like, tinned tomatoes. This makes the fillimg. Just layer with lasagne and then top with cheese sauce. Basic but kids like it.
