there's soooooooo many out there...all i want is something simple to do with the dds.

oh and that doesn't need veg oil like some i looked at, not enough in the house

I just do a regular sponge mix with a mashed banana addedst the end, then sprinkle extra brown sugar on top so when they are baked you get a gorgeous crunchy topping. I'm in fact going to make some now!

This is very simple and one of the best banana cake recipes I've tried. I always do muffins rather than a loaf and it makes about 10. I don't bother with the icing and banana topping.

Probably too late now, but from memory of the BLW cookbook's sugar free recipe:

240g self raising flour, sift into bowl, add:
4 ripe bananas, mashed
2 large eggs, beaten
1/2tsp cinnamon
60g melted butter

Stir well, bake in muffin cases for 10-12 mins at 180C.

Did this with 23-month-old DS, worked a treat :)

well, i can safely say after reading that i will not try nigella ones.....the others on here will all get a turn though (loads of bananas in freezer as man on market was selling two bunches of about ten for a quid on saturday)
