What can I do with lots of green peppers?

I meant to order 1 green pepper, order has just arrived with 1kg which is about 7 Shock. What can I do with them all?

I put peppers in almost everything. Salad. Stuffed peppers. Chopped and lightly fried (just a spray of oil), and served at the side of a meal as an extra veg?

Or do what I do - chop them, coat them lightly in veg oil, and freeze them to use at a later date. They cook well straight from frozen.

Otherwise, I agree, dice them up and freeze. I've never bothered with the veg oil, just freeze them on a tray and then tip into a tub and grab handfuls as needed to chuck straight in the pan.

I was trying to find another recipe that I haven't made for ages. You cook mixed peppers in sauce on the hob, put in a casserole dish, then make hollows to drop the eggs in and bake.

I couldn't find it but these look tasty.
