What will I do with these leftover vegetables? No cheese, cream or spicy things please.

Do you have any sausages and tinned tomatoes? Sausage casserole would be nice - dice onion, pepper and carrots and fry off, brown the sausages, chuck in 2 tins tomatoes, diced butternut squash, some tomato purée, a stock cube and some oregano and cook in oven or on hob for 1 hour. Serve with sprouts if you must!

No sausages in, DH hates risotto (among many other things..)!

Does it need bulk or is there enough? Just frizzle it up like bubble and squeak .

If needs bulk then mix with rice /couscous/pasta and cook the starchy element with a stock cube in the water.

Boring though no cheese or spice, would make great curry or pasta bake- but a pasta bake IMHO needs a cheesy top!

Butternut squash soup topped with sweet fried onions, yoghurt and lime
Brussels sprouts - fry with cubed potatoes and bacon.
Sweetcorn, pepper, carrots - stir fry and serve with fine noodles and tuna/prawns/chicken.
Roast butternut squash with peppers, carrots and onions serve with cous cous or bulgher.
Boil sweetcorn whole, then grill til charred - serve with melted butter and sea salt.
