Apple Custard Muffins
125g butter, melted
2 eating apples, peeled, cored and finely chopped
1½ tsp ground cinnamon
250g plain flour
50 g custard powder
225g caster sugar
1tbspn baking powder
½ tspn salt
2 eggs, lightly beaten
175 ml buttermilk (I used ordinary semi and added 1 tbspn lemon juice)
2 tbspns Demerara sugar
Preheat oven to 220 C/Gas mark 6. Grease or line with paper cups a 12 cup muffin tin.
Cook the apples in about half the melted butter in a heavy-based saucepan. Cook for about 10 minutes or until tender. Stir in cinnamon, remove from heat and allow to cool for 5 minutes.
Mix dry ingredients in a large bowl. Mix wet ingredients and apples in a jug. Add wet to dry and mix briefly until just combined.
Spoon into muffin cups. Sprinkle over Demerara. Bake for 20 minutes or until risen and golden. Cool in tin for 10 minutes, then on wire rack and serve cold or warm.
I cooked these for the first time last week. DCs loved them. Demerara sugar didn?t really add anything in our opinion so will leave that off in future.
