Bone in, skin on.

4 of us here so reckon that's 3 good meals? Maybe 4?

Am going to do a one pot kind of biryani thing.

What else?

Chicken and leek pie?

Use bones and skin for stock for soup maybe?

Could I stretch them to 4 meals plus the soup?

I usually do 2 thighs per person so for me that would be 2 maybe 3 meals?

This is my chicken pie recipe:

Poach thighs in chicken stock for about 30 mins.
Add chopped up mushrooms (and leeks if you want) for last 10 minutes.
Strain and keep the liquid.
Allow chicken to cool and then remove skin and remove meat from bones. Put chicken and mushrooms (and leeks) in pie dish
Make a white sauce using flour, butter and the reserved liquid. Add a squeeze of lemon juice, a tsp of mustard, chopped parsley and maybe some cream or creme fraiche. Pour over chicken and veg.
Put ready made puff pastry lid on (or make your own if can be bothered)
Cook for 30 mins or so in oven

Chicken and puy lentils: onion, garlic, chicken, tins or so of tomatoes, puy lentils, rosemary, red wine if you have, mushrooms if you have, a bit of sugar - cook in casserole on over after sautéing all for an hour or so.

We had chicken thighs tonight.

1 tbspn each of soy, OJ, honey,
squeeze of garlic paste,
cube of grated raw ginger,
1/4 tpsn of 5 spice (doesn't matter if you don't have any. It's optional.)

Stir together, toss the chicken thighs in the mix and marinade for at least an hour, and up to 24 hours.
Bake in oven for 35-40 mins. Skins come out all crisp and caramelised and the chicken is moist and has great flavour.
Serve with noodles or rice and steamed broccoli or stir fry veg.

brown the chicken, make some stock, stir in a good blob of mango chutney, pour over the chicken and casserole for about an hour, remove chicken, and thicken sauce, serve with rice and veggies - a firm family favourite here.

Do you have Fay Ripley's book? She has a fabulous chicken, carrot and orange casserole using chicken thighs. I presume not allowed print it on here as its not on a website or anything.

I do a Nigel slater curry with various spices, curry leaves, coconut milk and chopped tomatoes that is delish with thighs. I pull the meat and skin off once cooked and then add the cooked meat back to the sauce. DC love it.
