I've got the rib eye beef bones with loads of meat hanging on, how to make stew?

I've googled and gawped and they all seem to talk about uncooked bones stewy soup.

Have I got to just pick all the meat off and put it in gravy or do I put the whole thing in a pot?

Put them in a big pot of lovely flavoured stock on the hob and let them simmer for ages. The meat will just fall off the bones and you should be able to pick clean bones straight out. Yum!

I've covered the pot.

I couldn't fit it all in so bit of rib, bit of spine and all the loose meat I could pick off, bringing to boil in veg stock and then will simmer til burnt like most of my meals

No it'll be fine, just top it up with boiling water if it looks like it's getting low. When you can pick a clean bone out, or at least pull the meat off without much resistance, it's probably done.
