Hi all,
I have lovely dilemma.... Due to screw up by the butcher (he sold our rib of beef Xmas Sad but replaced it with an overly generous alternative Xmas Grin) we now have a mahoosive rib of beef- far more than we could eat. More than we could eat even having cold cuts after (I think).
What's the best thing to do
option 1- cook it all and freeze any cooked left overs
option 2 cut a rib or two off and freeze it?
It's a lovely joint and a rare treat or us, so I really want to use it wisely? Would freezing it (before cooking) ruin the meat? Or will it be ok?

I think I would cook it then slice it finely with gravy on a tray & freeze it.
