Prep vegs and leave in water??

We are unexpectedly at home today - DD not too well so have cancelled trip out. As such, I have a couple of hours I didn't think I would have. If I peel my spuds/veg etc and put in pans of water today will they still be ok tomorrow? I think they will - I often peel and stand veg like this for a couple of hours, but have never done for 24 hours!

I did this last year, all fine - except the sprouts. Had to throw them as they went all brown.

I'd par boil the potatoes, then fridge when completely cold, ready to go into very hot fat to roast, time saving for tomorrow. The rest of the veg just peel chop and into plastic bags, no need for water if they are wrapped.

According to one of the cooking ladies on the TV (can't remember which), you should not peel and prepare parsnips and put them in water as they will go soft, so that's something to do on Christmas morning. Most other things are fine; just remember to change the water a couple of times, so it doesn't go cloudy.

I did my sprouts Xmas eve last year and they were fine in a bowl of water.
