Am doing a leek, potato and onion soup for a starter. Wishing to make it today and keep refrigerated. Is there any reason to think it will in anyway go off in the next 72 hours?

I think it would be OK as long as it does not contain milk or cream.

IDismyname · 22/12/2012 11:40

Or if it does contain milk/ cream to make sure its very fresh stuff. You should be fine.

ceeveebee · 22/12/2012 11:44

Or just add the cream on the day rather than now?

Pan · 22/12/2012 11:54

oh it does contain milk, fresh today. It tops with cream on serving.

If there is doubt I don't want to risk it. I have an extended family member who will note any fault (real or imagined) and may end up wearing it if he says anything as it is! thanks v much for your replies. Appreciated.

I'm a big fan of starting early but wouldn't personally make it three days in advance. Vegetable soups are always nicest when they're still a bright colour. Make it the night before perhaps?

Pan · 22/12/2012 15:19

yes Cogit - best to do that. Time will be a bit tight but prob. best, thanks.

Do you have space to freeze it?

motherinferior · 22/12/2012 15:30

I'd do it, personally.

Disclaimer: my fridge is full of quite Jurassic things.

Pan · 22/12/2012 15:30

Well not really. It'll be in a big pot and so v messy to divi up. I think I'm agreeing with Cogit. Just best to make the time on Monday.
