Any good recipes for pumpkin ravioli?

I have a big squash from the allotment saved (about all that grew this year) and want to make something a bit more exciting than soup.
I've never made my own pasta, and recipes I've seen are either for a Parmesan / shallot and squash filling or a sweeter one with amaretti as well. Would love to hear if anyone's tried this, sounds a bit odd but could be great(?) Confused

Ooh I couldn't leave this unanswered...

Making homemade pasta (especially ravioli) is a right palaver. To start with you need specialist equipment such as a pasta machine to roll it out and a special metal template for cutting out and sealing the little pasta parcels. ravioli press. You also need to buy special pasta flour (Tesco sells it).

Having said that, it is great fun to make your own pasta. Look on Antonio Carluccio's website he's yer man for tips. It takes practise to get it right but it is very satisfying. The equipment can be bought on eBay or in Lakeland - I got mine in my local charity shop. Perhaps start with linguine or spaghetti until you get more experienced.

I am really envious that you have a squash leftover from your lottie 'cos I didn't get any on mine! Yesterday's Sat Telegraph had a lovely squash recipe. Xanthe's recipe for Chestnut, squash and cumin stuffing balls with chilli-cranberry sauce and Greek yogurt sounds divine.

Squash or pumpkin is nice roasted and served with garlicky yoghurt and lime juice with fresh coriander. Look up some Caribbean recipes for inspiration.

Ooh, thanks jamnam, those recipe sound gorgeous.
I tried a recipe with amaretti and the filling was lovely, not too sweet. Pasta however was "rustic" at best, tough and chewy! May need to invest in pasta machine sometime
If it makes you feel any better it was pretty much all I got from my allotment this year Sad
