We're having chicken breasts wrapped with pancetta - I have some slightly ropey looking king Edward potatoes. How can I make them lush? Smile

Dauphinoise? Or rosti? Or just slice into wedges, add salt & pepper & oil, then bake?

This is probably too late but chop into chunks, parboil, stick into a roasting tin with olive oil, fresh thyme, rosemary and whole garlic cloves and roast. If you heat the oil first it makes them extra crispy.
