Need Mumsnet Inspiration - what would you do with the following ingredients (tonight's evening meal)?

Hi all,

I have chicken pieces - red cabbage - a courgette - swede - and a cauliflower.

Some kind of stew? Xmas Confused

Would really appreciate your suggestions, I am not a natural cook (understatement of 2012).

stir fry would be my first thought- depends on your other stores though- garlic, ginger, soy, chilli.

Am sure a stew would work too!

Do you want to use them all?

I would probably do either

  1. Chicken and swede casserole with red cabbage as the veg (roasted in covered dish with some balsamic) or
  1. Chicken and courgette curry with cauliflower steamed, then added to a bit of onion/garlic/ginger cooked in a little bit of butter as side.

Casserole sounds good Maillot - what should I put in with the chicken and swede in the casserole dish (water? other herbs)? Could I do it in the slow cooker?

Erm, stock, bit of wine or cider if you had some?

I don't have a slow cooker - but would just be careful not to overcook the chicken. Thighs stand up to longer cooking better than breast.

I would put the chicken pieces and swede chunks into a roasting dish with onions and garlic, salt pepper and a good drizzle of oil, oh and some potoaoes - just washed and in chunks if you have them and cook for an hour in a 200c oven.
I would then make cheese sauce and have cauliflower cheese with it.

The red cabbage I would cook with an apple a handful of raisins, a spoon of sugar, wine vinigar and some herbs and a little water - in a casserole dish covered for several hours. - but I would only serve either the cauliflower cheese or the cabbage, as I don't think that the 2 would go together.
