steak and ale pie - in slowcooker?

My DP has asked me to cook this for dinner on Wed, as a farewell dinner for friends. I'm happy to do this, but fear it won't be ready til late as I'm working all day.

So, I had a possibly cunning plan: brown the meat, add gliquids etc and cook off the alcohol tom pm. Refrigerate overnight. Bring to boil Wed am then pop in slow cooker all.day so meat is tender by the time I get home, then make into pie and cook until the pastry is done.

Will this work?

It'll be fine. I make it the night before. Leave in the slow cooker over night. Switch on in the morning and cook while I'm at work

Brilliant. I thought it should work, but it seemed too clever and I wasn't convinced there wasn't a fatal flaw hidden somewhere.

You should be able to put it all in the slow cooker and leave it, alcohol etc will cook off in there I would have thought?
