I'm always interested in creating interesting sugar free recipes for my daughter. Some of them are gluten free so might be useful. What about these:
banana banana biscuits if you had gluten free oats.
rice pudding with star anise doesn't contain sugar but is creamy and sweet anyway
baked apples but without the tsp of agave syrup
I think there was also a thread on MN that asked for puddings for a gluten free vegetarian..can't find it now but that might be useful if you can track it down!

There are some glutenfree and sugarfree recipes on the No Naughties (sweet treats without sugar, wheat, gluten and yeast) website: www.nonaughties.com. They are not all Christmassy, although there is a gingerbread house recipe.
