Ganache icing- what went wrong, boo hoo!!! :(

So, it was my first time attempting this...it looked quite simple but went horribly wrong! I heated the double cream over a pan of boiling water and then poured it over the wizzed chocolate crumbs and then stirred and it all seemed to separate and go all oily!!!! Help! What on earth did I do wrong? Now I have no icing for my Nigella chocolate cake. :(

you need to heat the cream directly over the heat until it is nearly boiling, then pour over the chocolate.
the cream was probably not hot enough.

Can you try reheating the cream and chocolate mixture then whisking (if you want a fluffy ganache that is)?

Pretty sure that whiskibg and slowly adding more - cool- cream fixed it when i had separated ganache.

Whisk with an electric whisker has rescued in the past for me.
