I just buy those packs of suet, add water and that's it! Grin Port should be ok with beef I guess, as long it is jsut a splash.

port is fine, but stronger/sweeter in flavour than red wine, so don't add as much.

I add self raising flour and water to some shredded suet - it gives you the proprtions on the packet. Chopped fresh parsley is nice in them or sometimes I add a lot of paprika - depending on the stew the dumplings are going with.

I use Atora suet, the method is written on the back. They turn out really yum, or you can buy a ready mixed pack that you just add water to and stir. Fab!!

All you need is suet, self raising flour and a little cold water.

General rule - half fat to flour eg 75g suet to 150g flour.
Sift the flour into a big bowl, add the suet, a little seasoning and mix together.
Add cold water a little at a time and mix with a metal spoon, then roll the dough into little balls.
Add to the stew, cover and put back in the oven for 15-20 minutes.

I use vegetable suet - a lttle less saturated fat than beef suet. Also usually add herbs to the mix for a bit of extra flavour. Fresh parsley is good but anything suitable to the meat can be used instead eg rosemary in dumplings for lamb stew.
