in my slow cooker, a gift from my neighbour, the heads of two large salmon. Great but what do I do with them?

Why not take them to a movie? I'm pretty sure you don't have to pay for them. Realistically I'd have thought they'd only be good for stock.

Made lovely pea, mint and parmesan risotto - just finished. Cats thought the heads were great - everyone pleased here Grin

I've not tried it, but there is a wonderful-sounding recipe in HFW's Fish Book for a scandinavian-stylee soup. It was made from simmered salmon head and bones (ie:trimmings from one filleted fish) with potatoes and maybe onion. Once cooked through, fish bones removed, small pieces fish flaked in and finished with cream, lemon and dill. It sounds like the ultimitate in thrifty but delicious food. Will post recipe if I can find it.
