Gluten-free cake mixes. Can you recommend any?

Need to make some gluten free cup cakes for my mum's birthday, but have never done a gluten-free recipe before. Was thinking I might play it safe and buy one of the mixes that are available, but was wondering which ones work and which are to be avoided. Any help would be gratefully received.

I would google flourless chocolate cakes. My husband makes a brilliant cake that is actually gluten free because it has no flour but lots of almonds. I'm sure there would be loads of great recipes on the net (sorry haven't got a link for you). Actually, I'm sure I saw a thread here about nigella's flourless brownies....Good luck!

Doves farm gluten free flour can be substituted for normal flour in any cake recipe. The taste is the same or better but the texture can be a little more crumbly. The cakes won't keep quite as well so best to make on the day if possible. I use it all the time as my DH is coeliac and usually no-one even notices!

I think Gluten Free Palace has some great gluten free baking mixes to choose from- cookie mixes, pie mixes, pizza mixes, pancake and waffle mixes etc. Take a look!
