GREEN PEPPERS - i have lots in the fridge - suggestions please!

They arent as sweet as red and yellow ones which is why i have ended up with a load in there. I dont want to throw them away but no idea what i can do with 6 or 7 green peppers in one batch.

chop em up and put them in shepherd's pie / bolognese

chop small and mix with tuna mayonnaise (tuna pasta or sandwiches)

I basically always use a bit of green pepper with other coloured ones

Was going to suggest a veg stir fry as I love green peppers in them and I hate red peppers.. but 6 or 7 might be too many Grin

Stuff them ? Fry onion and mince add tinned toms some cooked rice, add some worchester sauce herbs and seasoning. Cut tops off peppers and deseed. Put mince mixture into peppers top with grated cheese and/or bread crumbs. Bake in a preheatede oven (180 c) for 30mins.

I use them in chilli, spag bol, faijitas, stir fry, beef and green pepper in black bean sauce

Thank you everyone. Stuffed peppers sound nice. Might do some more hiding in DD's dinners Grin but there are so many i thought i could do a sauce/soup/chutney/relish type thing that i could freeze or preserve.

Mojo sauce is fantastic spread on chicken, with chips so yummy i want it now. Google on it, had it in majoca and i want some now.
