Soup is by far the easiest. I would probably roast the pumpkin first and whilst that is roasting, slowing saute an onion and garlic in a pan. Then bung in the pumpkin, some stock, slowly simmer, then blend with some creme fraiche or milk. Yummmmmmo

Soup is easiest but pumpkin pie is best.

But you have to peel, chop, cook, drain, mash, and then drain the pumpkin again before you even get to the proper baking :o
