What are yourfavoyrite family egg recipies, pleaae?

I am not much of an egg eater, but do cook them for the family. I cook quiche, caramel cake, and muffins regularly. But now we have chickens I am struggling to use all the eggs they produce.

Please share your (not too complicated) egg recipies and ideas.

Have you ever tried frittata? I use onions, peppers, cheese (or any leftovers really) with cooked potatoes, herbs and of course eggs. Bit like a more substantial omelette, the DC love it. We eat a lot of eggs, boiled egg and soldiers, egg on toast (fried/poached runny egg). I also use eggs for doing my own chicken nuggets, glazing pastry and so on.

Could you sell the excess eggs? I always stop outside places that sell from their house as they seem to be truly "free range".

Oh, yes I do cook omlettes like that, too (never seem to have leftover potato, but am working on it!) It takes 2 eggs each, so a great way to use lots up.
If I want a 2 egg recipe, I tend to cook drop scones/Scot's pancakes, with 4 I make 2 quiches.

I live opposite a school, so it might be a bit too much temptation to leave eggs out! I tend to give a few excess eggs away each week to my customers.

Egg mayo, of course!

My little one doesn't really like eggs but she'll eat the following:
Egg custard, or french baked custard Clafoutis
vegetable and noodle soup with egg goes down well

Eggy bread for breakfast??? I grew up on it, and my DDs love it too. It goes down a storm on Brownie sleepovers. Good with bacon, spread with marmite, or served sprinkled with sugar.

What's caramel cake? Sound yum.

We have hens so lots of egg fried rice (everybody's favourite here), tortilla, poached eggs with spinach, chakchuoca (sp). I do homemade ice cream a lot with the yolks.

I love omlettes. And kedgeree is divine.

I was going to say eggy bread with cinnamon sugar!

Oooh! Cinnamon sugar haven't tried that, but sounds nice.

Beaten to eggy bread for breakfast.
My kids (1 and 3) also love boiled eggs for breakfast.

Swiss rolls and roulades (savoury swiss rolls) are good for using up eggs.

Meringues if you end up with lots of egg whites.

You can also freeze seperated eggs (ideally with a little salt or sugar in them)

Just add a tad of ground cinnamon to sugar and mix! You could also add cinnamon sticks to a jar of sugar and leave forever but the ground mixed in works just as well if not better! Goes lovely on rice pudding or porridge to!

Baked eggs in a buttered ramekin lined in a slice of ham. You can add tomato, peas or cheese.

Eggy bread and Spanish omelette. The hairy dieters bacon and eggs is prey scummy too .

I never have left over cooked spuds so I tend to just slice potatoes thinly, cook them gently in simmering water, drain well and then use for spanish omelet.

I just love a spicy omelette with peppers, tomatoes and onions, just divine!

I had hoevos rancheros for lunch. Very tasty.

Pancakes! Just had them for lunch, yum :)

You can also make souffles (takes lots of egg whites) and spoon bread. I also make mayonnaise with our eggs. It's much better than store bought, though it doesn't last as long.

Do any of these recipes freeze well?

Sorry for the late response! Spoon bread is eggs, milk, butter and corn meal all blended and baked. I usually add cheese and some veg to make it interesting.

I think you could freeze crepes, but I'm not sure about other stuff. You can freeze a frittata!

Sundaegirl, the caramel cake is my version of the salted caramel cake from a book called 'How to teach Dad to cook flapjack'. I don't really like cake much, but I have had to cut down how often I cook this one, as I can't resist it. Will add recipe when I can get on a pc/laptop.

You can freeze a fritatta? What is the best way to defrost and reheat them, so they don't get overcooked and tough, or watery and flaky?

I must try that, as although they are great fresh it means we don't all sit at the table, so I usually leave the ingredients out when we all in eating at different times, and everyone helps themselves. It gets a bit messy, so would love to cook them myself freeze and serve all at once. It will be a great one for when hungry teenagers are around.

Souffles have a bit of a reputation but with modern ovens being much more reliable than in the olden days, they're actually not hard at all - basically just whisked egg whites mixed into a cheese sauce.
All you have to remember is to fold the egg whites in gently so the air doesn't come out, and serve it immediately it's cooked.

This is a good basic one.
