Chilli for dinner but bored of rice. What do you eat with chilli?

Big pan of veggie chilli made ready for later but don't fancy rice. What shall we have with it instead?

DM - I'm glad you enjoy it but personally I didn't like the sound of it. Sorry for the ugh though. :)

Calypso -

This is how I do it:

2 diced onions, 3 diced carrots, 1 diced courgette, 1 diced pepper, 3 cloves garlic, any other vege I fancy (celery, leeks, sweet potatoes, butternut squash) plus a chopped red chilli. Fry for a few mins with a load of finely chopped parsely and coriander. Add paprika, cumin seeds, chilli flakes, cocoa powder, black pepper. I then add a cup of strong black coffee and a tablespoon of barbecue sauce (currently a Jack Daniels one!) plus a teaspoon of chipotle paste. Add passata, water and red, green and puy lentils (the red add bulk and the other two add texture) plus a little bottle of lager. Shove in the oven for about 40 mins (it may need more water). Then add a couple of tins of kidney beans and warm through. Lots more coriander on top to serve.

I'm cooking for 4 but usually make enough for 2 meals. I use a big stockpot.

Am sorry re the mashed potato, honest! It's just that the idea of anything tomatoey with mashed potato just really doesn't do it for me. Each to their own though. Grovel...

Yum to sweet potato wedges - no sweet potatoes though. While we're on the subject, baked sweet potatoes split open and filled with red chilli, soured cream, red onion and coriander are a thing of wonder too.

It won't taste of coffee. It just makes it a bit darker and more intense and takes away some of the 'tomatoeyness' that a lot of veggie meals tend to have. I don't always put lager in it but it's better if you do (obs you need less water then).

I'm actally going to second the mash potato

I turn chili into a shepherds pie type dish and run cheese and spring onion through the mash, bung the whole thing in the oven to set the top & melt the cheese -yum!

S&S - I can see that working with a meat one but just don't fancy it as a veggie one. But I am 'funny' about both mash and tomatoes so...

...Over Here..."Spaghetti Red" is a Biggie. Men Love it.I think it is a "Man" thing.We just cook a regular spaghetti dinner...and after ladling the Sauce on-we place a 4-5 inch Circle of Chili in the Center of the spaghetti.
