My dd si 2.5 and is just recovering from a sicky bug. Want to start building her up and eating better again and the same for me and dh. Have you any meal ideas taht we could all have. She eats pretty much most veg but i find i'm stuck with mash potato most nights or baked. She will eat some pasta but can be a bit finicky with food at times. Lunch times are also a bit hit and miss - she likes finger food such as crackers, with philly etc but i'd like more variety. i thought this might be an ideal time to start to reeducate her a little, once she's got a little more strength. Any help would be appreciated. Thanks

Try putting a whole load of different veg in a pot and simmer in some veg stock - it's very nourishing and your DD can dip her crackers or toast or whatever into it if she prefers to do finger food. It's a really low maintenance and easy way to cook good stuff. The veg casserole can then be added as a side veg for you and DH if you wish or served over a baked potato or with pasta and also freezes very well.

sorry - brain is on a "go slow" - try tortilla wraps which you can stuff with pretty much anything and will fill the " I want to eat with my fingers" requirement. Omelettes can also be veggie- filled - a lovely savoury filling is mince cooked with onion and shred or slice copurgette in it , some grated cheese melted in and it's a lovely gooey healthy mess.
