What can I do with a side of Salmon for tonight's tea?

My Dad is coming round for dinner tonight and I've had a "Side of Salmon" in the freezer for a while so have taken it out as he loves it but I have no idea how to cook it. Does anyone have any ingenious ideas?

How about salmon en croute? Always impressive and this one looks dead easy.

Bake it wrapped in foil and do the herb sauce from the Jane Grigson fish book. Basically the sauce is cream heated with butter and chopped tarragon and parsley in it. It's quite rich, but lovely.

Thank you all. I've just put Sophie Conran's recipe for Salmon En Croute in the oven alongside Nigel Slaters classic Dauphinoise potatoes! Yummy :)
