Need really quick and easy banana cake recipe...

Can anyone help? I have got a good recipe somewhere but cant find it. Thanks !

Radley knows how to do one - I was chatting with her yesterday and she had almost eaten a whole one. Grin Grin. She must have a good recipe.

Banana, date and cherry (I leave out the latter two ingredients)
2 ripe bananas
1 teaspoon bicarb
2 tablespoons hot milk
100g marg
175g caster sugar
2 eggs
225g plain flour
1 teasppon baking powder
50g cherries
50g dates.

350/180/gas mark 4
Mash bananas. Dissolve bicarb in milk and add to bananas.
Add all other ingredients mix well.
Put in tin and bake for 1-1.15 mins till well risen and golden.

Quick Banana Cake:

5oz SR Flour, 0.25 tsp bicarb soda, 1 ripe banana, 2oz soft marg, 1 egg, 5oz sugar, 0.5 tsp vanilla essence, 0.25 tsp salt.

Place egg, banana, sugar, butter, vanilla & salt in liquidiser, blend till smooth.

Sift flour + bicarb into bowl. Pour liquidised mixture in.

Mix all together well.

Pour into greased loaf tin, gas reg 4, approx 40 mins.

Improves with standing. Top with lemon icing.

I also have a more complicated recipe for making in s/wich tins.

Here is the one that I used yesterday and it is gorgeous and ALL GONE now lol.

Banana Tea Bread

225g/8oz SR flour
1/4 tsp bicarb of soda
pinch salt
75g/3ox butter
175g/3oz caster sugar
2 medium eggs
450g/1lb banabas, weighed with skin, peeled and mashed
100g/4oz walnuts, chopped (optional)

  1. heat oven to 180C/350F, Gas 4. Grease and line the base of 2ib loaf tin
  1. mix together flour, bicarb and salt
  1. cream the butter and sugar until pale and fluffy, add the eggs a little at a atime alternatlively with the flour
  1. stir in remaining flour, bananas and nuts and lpace in prepared tins. bake for about 1 and a 1/4 hours
  1. cool on wire rack.

Only thing I would say is keep an eye on it, i THINK this is for a normal oven not a fan oven, mines a fan oven and it was cooked to perfection in 35 minutes.

That's very similar to mine radley, i made it yesterday too and we have one teeny slice left (just so dh can't say I ate it all Blush)
