I'm going back to work soon after mat leave and i'll need to start taking lunch with me.

What can I take? I used to rely on cheese sarnies but have had to give up dairy until I wean ds.

What can I do with beans to make them interesting?
Can I do anything with eggs apart from egg mayo sandwich or hard boiled?
anybody got any ideas for cheap, filling and vaguely interesting lunches to sustain a grazer who hates being desk bound?

Houmous & red pepper is one of my favourite sandwich fillings. Or how about making a tortilla omlette to eat cold with salad?

Have you got a wide mouthed thermos? If so you could always make a mixed bean chillie and eat it with some pitta chips?

This is idiosyncratic, but it's all I have.

Start with a David Scott recipe, slightly remodelled: Fry an onion, add one tin tomatoes, one tin chickpeas, one halfsized tin butterbeans and a large spoonful of peanut butter. (This is the key ingredient, obviously.) And add herbs or whatnot. Season. Simmer for half an hour with a lid on.

Serve with rice for dinner.

Then, this is the part that I know to suit my own personal taste only, stuff the leftovers into a brown roll (I rip some of the roll out to make room for more beans.)
