Lunch ideas of DH at work and DD and I at home?

My mind has gone blank and I need some clear thinking!

On a Thursday DH is at work and DD and I are at home. DH needs to make his lunch first thing in the morning (or the night before if he is organised - but he never is!). Dd and I buy bread on a Thursday from a stall in town so there is never any bread on a Thursday morning for sandwiches. We are on a bit of an economy drive so i have been trying to feed us all the same food as it is cheaper/easier.

Thursday lunch has therefore been pasta, homemade tomato sauce (which I have frozen in small pots) and grated cheese - FOR THE PAST MONTH AND A HALF - and I am frankly bored.

What can I make that can be eaten at work or at home, doesn't involve bread, is cheap, and is quick (or can be prepared in advance)?

I'm stumped - does anyone have any inspiration.

Spanish omelette?
buy 2 loaves of bread and freeze one, taking 2nd one out when you need it?

How about soup? If your DH can heat it up at work that is. Even if not, it would be good for you and your toddler to have a tasty hot lunch. Easy to make, you can freeze it too.

I make a simple veg soup using onions, carrots (and whatever else is lurking veg wise), garlic, red lentils, some ground cumin if you like the flavour - cook with some hot water (with marmite stirred in) and whizz in blender. Does that sound do-able?
