I've just made helsi's banana bread to use up some bananas that will be no good in a day or so.

If this one turns out ok and i make another, would it be ok to freeze once it has cooled down?

I haven't tried (and I make this alot - we just eat it fast) but it does keep well for about a week though. I suppose the only way you'll know is to try it (make a small one to avoid wasting all that lovely cake!!).

Waaaah - I want some but me and Rosemary Conley have a deal...

I've just made it and it says on the recipe it should take 1hr and 15 minutes, mine has taken 35 minuts and it is a lovely deep brown, any longer and it would burn.

The recipe didn't say fan or electric oven though and we have a fan oven.

Mine never takes more than 45 minutes but stick a knife or skewer in the middle to check it's not still runny inside. You can always cover it with foil to stop the top burning and put it back for ten minutes.

I always think it's better the day after it's been in a tin overnight to go all sticky!

I love cake....
