Whole chicken + gallons of stock - what to make?

Probably a daft question - sorry.

I'd normally make casserole with the stock and just roast the whole one. But I need freezer space so I want to shift both the whole chicken and the pots of stock.

Needs to be realatively simple to prepare - I can't see myself jointing up the chicken for example.

Strip the chicken and make a vat of chicken noodle soup. We can get through 2 litres in one sitting, yum.

Heat stock, add in shredded chicken (just pull it off the bones, no need to be dainty about it) add pre cooked rice noodles. Once it has come to the boil for a couple of minutes it's done. We add sweetcorn sometimes and it is lovely, for even more excitement add some chilli flakes and a squeeze of lemon at the end.

Similar to LostInWales, except I would say chicken soup with dumplings - suet covers a multitude of sins, in my opinion.

Also, if it is literally gallons of stock, have you considered reducing it and freezing?

Well, probably not gallons, but a few litres at least (all in 1/2 or 1 litre tupperware pots, so taking up loads of space).

I have 2 more raw chickens in the freezer which will generate yet more stock once I get as far cooking them!

Soup sounds good.
