Please help me do some low carb meal planning, I'm in a rut

I generally eat:

eggs

and cooked meat and salad.

sometimes steak and fried tomatoes.

Bolognese (with no spag).

I'm so very bored of my diet. PLease help me think of more meals, particularly food for colder weather as I'm finding salad less and less attractive.

Aubergine/courgette parmigiana; slice up the veg, fry up a chopped onion with some garlic, add chopped toms then layer the veg in an oven proof dish with cheese (mozzarella good) and tomato sauce. Top generously with grated Parmesan and bake 180deg for about 30-40 mins. Lovely with meat, especially lamb.

Often roast a pile of different veg and drizzle with olive oil and balsamic vinegar as an alternative to salad.

Make cottage pie with sweet potato mash on top?

Do you eat fish? Smoked haddock on a bed of steamed greens with soft poached egg on top is great....

brill thanks Sleep, I would never have thought of these.

I'm not keen on fish, but I don't mind a bit of smoked haddock occasionally.

If I'm feeling indulgent I add m&s hollandaise on top of the egg. Yummo! as my DD would say Grin

Moussaka
Lasagne but with veg layers instead of pasta (leeks, squash, courgette)
Tagine with salad instead of cous cous

If I'm trying to cut down I just do an extra veg instead of rice/potatoes etc.
-grilled chicken/fish/beef with stir fried greens
-roasted veg (sweet potatoes, squash, courgette, pepper, mushrooms, cherry toms etc.)
as it's getting colder there are loads of hearty soups that don't need any carbs in, like curried lentil, sweet potato, corn chowder, minestrone (w/o the pasta or just a tiny bit), cauliflower etc.

I'm doing some kind of chicken dish Grin
Chicken with courgette,peppers,onions,garlic,chilli, chopped tomatoes,herbs and chorizo
Have never made it before but I'm hoping for a chicken ratatouille/stew effect!

I also have stir fry a lot, or chicken with roasted veg
