Have got a bit of leftover chicken - ideas please

There's not much... can I use it for fajitas for the children? Can you use leftovers for fajitas? And what should I serve them with? (Can you tell I haven't made them before / am useless cook?)

fajitas - just fry up the shredded chopped chicken with onion, peppers, brocolli whatever veg you have, amd add seasoning and bbq sauce if you have it, then wrap up in a tortilla (you can warm the wrap in a dry frying pan first)

i also do:

  1. chicken stirfry - fry it up with soy sauce, sweet chilli sauce and veggies serve with rice or noodles
  1. chicken pie - cook up the chicken with onion, garlic, a little white wine, let it cook off, add cream, pile into a pie dish, cover with a sheet of puff pastry bake for 25 mins
  1. chicken burger/patties? combine with breadcrumbs, parsley, onion, fry up!

I generally make left over roast chicken into chicken pie. DCs love it

Generous knob of butter into a saucepan. Add sliced (washed) leek. Stir and let the leek cook a bit. Add a spoonful of flour then a small glug of chicken stock and cream. A tiny bit of dried thyme is nice if you have it. Mix in your chopped chicken. If you have frozen peas and/or spinach, stir them in too.

Put the mixture in a lasagne-type dish and top with puff pastry. If you want to, you can brush it with milk or beaten egg but I rarely bother.

Bake in the oven for 20 mins or so, until top is browned.

Veg, meat and a bit of carbs. Whole meal in one go. Yum.

Thanks both of you. I usually do chicken pie too, thought I might branch out today Smile. Boys do love it though.

What seasoning for fajitas? Not sure I can get something readymade here (not in the UK)

I do a chicken rice thing with leftovers. Put shredded chicken, rice, tinned toms and some cold water in a pan along with any raw vegetables you want in it. Stir and bring to boil then put lid on and put in oven for 15 minutes. Take out and stir then add any left over cooked veggies you have or tip in some tinned sweetcorn or frozen peas. Bring back to boil adding more water if needed and cook for another 5 mins until rice is done.

This is a low salt, spice free version that my fussy children love. You could add more flavour with stock, spices, BBQ sauce etc

Any Smoked paprika n garlic? That's what I usually use - and sometimes some cumin powder, chilli flakes n a gulg of lager. Bit just the paprika n garlic if I can't be bothered. Think fajitas is more about the other bits - sour cream/creme fraiche, grated cheese, salsa, guacamole etc

Oh n other thing I do with leftover chick is chicken divan. A sort of cheesy spiced chicken n brocolli bake. Another variation on doing chicken pie is doing same sort of filling but topping it with layer of gruyere then garlic bread slices n bit more cheese.

Chicken bacon and avocado salad - fry streaky bacon until crisp, mix with iceberg/cos lettuce, chopped avocado, shredded chicken and dressing (oil, lemon or vinegar and dijon). YUM! I usually serve with fresh bread, but new potatoes would be nice too.
