Need ideas for sauces!!! food exclusions.....

I desperately need ideas for sauces that don't include or rely on to make the final dish...
gluten, tomato, cheese, soy, eggs, (dairy apart from yoghurt)!

so far I have:

  1. Roasted pepper sauce with olive oil, coriander and garlic
  2. Coriander, olive oil, garlic, lemon juice, ginger, yoghurt
  3. Sesame oil, olive oil, lemon juice, fish sauce, coriander, mint

Mushrooms, garlic, parsley, wine and stock. Add a little natural yogurt at the end if you want it creamy.

Very similar to your ideas but with grilled fish I usually serve a warm dressing - olive oil, lemon juice, garlic, chopped parsley or basil, capers, seasoning.

What is the final dish you are having?

You make most meat sauces/gravies with cornflour or gluten free flour as normal.

DH makes a fabulous fake satay sauce:

Sorry not very precise, but roughly:

Grate a small onion and fry in oil til soft but not coloured, add creamed coconut maybe 1/4 block and around 1 tablespoon light tahini plus some water (it goes very thick so add enough to make it sauce consistency ), crushed garlic, chilli (chopped fresh or powder as you prefer), salt and lots of lime juice. Stir and cook for a bit.

Actually if peanuts are ok you could have real satay sauce! DH doesn't add soy sauce as he can't tolerate it, I can't eat peanuts, so I can guarantee you can make a good sauce without either :)

sweet and sour? Vinegar (pref rice), sugar, soy (so g.f. tamari), cornflour. Use pineapple not tomato, obvs.

Nice, chinesey flavour with: tamari, sesame oil, rice wine vinegar and fish sauce?
