Simple and tasty ratatouille recipe please

Since hating ratatouille all my life I never wanted to know how to cook it.
However, DS and I seem to have developed a taste for courgettes and I think I will have a bash.

Don't want aubergine in the recipe and it needs to be low fat if poss.
Any suggestions?

This is how I make it. You can leave out the aubergine if you want.

An aubergine
A couple of courgette
Red/yellow/orange pepper
An onion (can be red)
Some cloves of garlic
Tin of chopped tomatoes
crushed chilli (optional)
dried oregano
dried basil

  • chop up aubergine. Salt. Leave for half an hour. Rinse thoroughly
  • chop up onion, fry in a bit of oil
  • add a pinch of crushed chilli, if you like
  • Add aubergine, chopped courgette, chopped pepper, tin of tomatoes
  • add pinch of dried oregano, dried basil.
  • simmer on v. low heat for an hour or so

Hope it goes well. We make this about once every two weeks, and then I live on the leftovers.

Cold ratatouille with cottage cheese is lovely. But maybe just for me?
