Weird recipe though. Has egg in it and just a puff pastry top. Shall report back later

Have my eye on that one but not yet had chance to do it - need the veg box to have spinach in this week or a trip to Lidls!!

Was nice. Did it with frozen spinach. Dh having it cold with salad later, hope it doesn't go soggy

Thanks for the tip will give it a try - would like to have at least a couple of veggie meals a week so we get a bit more balanced.

I made that and served it with his honey roast tomatoes.
We really enjoyed it.

Netto, can you link? Dunno how to do it on ipad. Roast tomatoes sound yum. I planned a quarter of the spanakopita each for dinner with big salad and a quarter each for lunch today. Dh ate 3/4 last night. Will have to make it again.

have googled but htere doens't seem to be a link. so will type out. excuse typos, need to rush:
1kg bag frozen spinach
1tsp cumin, fennel or carawy seeds
sliced white onion
fresh thyme
2 large eggs beatne
100g feta ( i would suggest you use a little more)
35g pine nuts toasted
375g pack puff pastry

prehat oven to 200, defrost spinach in a pan. cover and heat gently. tip into sieve and squeeze water out.
heat olive oil and fry seeds. add onion and cook for 10-15 mins until really soft. add thyme
mix spianch, onion, squeexe of lemon juice, and plenty of salt and pepper. set aside 2 tbsp egg and mix the rest into the spianch mixture.
pile 1/2 spinach mixture into dish, crumble feta over nad sprinkle pine nuts over. Add rest of spinach mix.
brush the rim of the dish with beaten egg and put puff pastry over the top, trim off excess and brush with beaten egg. bake for 25 mins or until golden brown and puffy.

as you can see it is different from traditional spankopita but was quick and easy and yummy
